Creamy Shrimp Scampi
I doubled this recipe and I'm so glad I did because we like a lot of sauce on our pasta. I also omitted the shallots, used half/half instead of heavy cream, and only used half the butter and it's still fabulous! I like the zip that the lemon adds.

Banana Rum Cake
Very yummy. The adults LOVED it, kids, hated it. So next time I'm going to use rum flavoring. Great way to use up ripe bananans.

Simple Scones
A winner! I made a double batch and they disappeared the same day. My kids loved them. I added dried cranberries and choc. chips. Next time I'll add orange zest.
