Absolutely delish and the family LOVED! I only used three chicken breasts and I boiled and shredded them. I also used white corn tortillas and probably had to use a tablespoon of vegetable oil every fifth tortilla that I softened. My daughter who does not care for chicken ate three of them! Very good and very easy. Followed the recipe, but added some sauteed mushrooms, onion and carrots as others suggested. Excellent comfort food on a cold day!

I made this for company this evening and everyone raved how delicious and moist the chicken was and what a great flavor the bacon added! Along with the pineapple and mushrooms, I added some red pepper and red onion chunks. I also let the chicken and mushrooms marinate all day and I doubled the marinade as well. I put it all together before the guests arrived. Will definitely be a keeper!
