Mexican Bean Pie

I just wanted to warn people out there who may be as unsuspecting as I was: wear gloves while seeding the jalapeno! I was in intolerable agony for 3 hours because I seeded the jalapeno with my fingers. Fortunately I only got it on my fingers. I tried milk, sour cream, oil, alcohol, coffee grounds, vinegar, etc. I washed it off with dish soap. It just kept on burning...So USE GLOVES. The dish is good, it's hard for me to assess because I was thinking about the pain rather than the food, I would just leave the seeds in next time, and still use gloves.

Makhani Chicken (Indian Butter Chicken)

I am so happy to finally have made an Indian meal at home that actually tastes Indian. I made some modifications: I added about 1/2 tsp of coriander, 1/2 tsp cumin, 1/2 tsp turmeric, 1/2 tsp curry powder, 1/4 tsp cinnamon, and 1/4 tsp cayenne pepper to the yogurt marinade. I cooked this in a large saucepan, sauteed a shallot and some white onion in peanut oil, then added the chicken mixture to only 1 cup tomato puree and 1 tbsp honey (nothing else in the third list). I simmered the mix over medium heat for 10 minutes, added 1/4 cup of ground cashews and 1/4 cup more yogurt then simmered for another 10 minutes.

Kashmiri-Style Kidney Beans with Turnips

Yummy! I had to stop myself from having a third helping of this! I didn't change anything. I love the turnips. It's easy, and healthy too. The cumin seeds were definitely worth the purchase. I will be making this again. Thank you.

Creamy Dill Salmon Steaks

Yummy. I couldn't find any salmon steaks, so I chanced using fillets instead. Still great results! The sauce is nice and went well with some jasmine rice.

These are delicious! I love the spices and the perfect crispiness on the outside, but soft on the inside. I served this at a dinner party and everyone was pleased.

Prosciutto Wrapped Asparagus

I did not like the cheese in this recipe, to put it mildly. If I make this again, I will use real cream cheese and halve the amount. Otherwise, the proscuitto and asparagus came out well.

Sauteed Portobellos and Spinach

Very tasty, I found the basil to compliment the dish just fine. I also used fresh spinach, but this would taste good with frozen too. This was an elegant side dish for a dinner party, with roasted herbed red potatoes and savory pork loin with a sweet sauce.

Nikki's Steak Saltimbocca

This is a "gourmet" recipe! Loved it. The steaks turned out tender and the flavor was as promised. I seared both sides of the steak before rolling and the cooking time worked for me, I like steak a little rare. I did not use toothpicks, just rolled and put in the pan, but cooking string would also work with no fear of burning. The taste is very distinctive, so it doesn't suprise me that some people don't care for it. It would be a risk at a dinner party, but it's great for a restaurant quality meal at home.

Pumpkin Cookies I

I didn't have any baking powder so I substituted 1/2 tsp baking soda and 1/2 cup yogurt. I also didn't have parchment paper so I lightly buttered my baking sheet and hoped for the best. They turned out perfect! The texture is moist and muffin-like and the taste is perfect for fall. My roommate also loved them!
