Peanut Butter and Banana French Toast

So delicious! We added a sprinkling of semi-sweet chocolate chips and used fresh whole grain bread from the bakery. We used coconut oil to fry it instead of butter, as it's healthier (good fats and doesn't become a carcinogen at high heats) and it imparted a very minimal but lovely flavor. This was delicious, filling, and not terribly unhealthy. I'm definitely going to make it often!

Peanut Butter Stuffed Jalapenos

My bf and I didn't love these. I thought I'd love them since I love peanut butter and I love spicy food, but this didn't really hit the right spot. Next time I'll make a spicy peanut sauce -- I knew such a simple peanut/spicy fix was too good to be true. I gave this three stars because there's nothing inherently wrong with the recipe, and I did eat it, but I won't be making it again.

Banana Banana Bread

This came out very well. I made some changes to up the nutrient factor: I used 1.5 cups whole wheat flour and .5 cup regular white flour, and I added 10 tbs of wheat germ. I also made 20 muffins instead of a loaf of bread. I think they baked in about 20 minutes, but I forgot to time it.. Just stuck a knife in the center when they looked done, came out clean, took them out. I painstakingly recalculated all the nutrition information for my version which basically came out to (per muffin) 157 calories, 5 grams of fat, 24.5 carbs (2.5g fiber), 3.5 protein. I also have ALL the other nutrients figured out, which I'll be happy to share with anyone who asks. The highest were potassium (200mg), manganese (22%), selenium (13.5%), and thiamine (9%). Delicious AND healthy!

Quiche

Delicious! I made this for my best friend's bridal shower and it was a huge hit. She said it was the best quiche she's ever had! I used two parts imported gruyere cheese and one part imported sharp white cheddar. I doubled the recipe and added one egg. I also used half and half instead of half of the milk. I used vegetarian ham and I added about half a package of thawed frozen spinach. Everyone was so impressed with my cooking skills, but this was really so easy to do.

Zucchini Quiche

Sweet JESUS, this is DELISH. Just made this for my best friend's bridal shower. Made an extra for my own household, and I think it's my new favorite food. I made it just as it's written in the recipe, but I doubled it and added one egg. It was a huge hit at the shower; everyone was so impressed with my cooking skills (this quiche looks so pretty along with the amazing taste), but it was SO easy to make.
