I won an apple pie baking contest at the school where I taught in the 1990's. I received fourth place in the Fast Freezer Desserts contest in Quick Cooking magazine in 2003.

Flourless Chocolate Cake I
This is so absolutely delicious and decadent. I made the recipe exactly as stated, except I used a 10-inch springform pan wrapped in foil. It tastes so rich. I made sure my butter was at room temperature and I sat my eggs out to get close to room temperature as I made the cake. Really, really worth the price of the ingredients!

Angela's Awesome Enchiladas
Yum, yum, double yum! These are definitely a little extra work , but they are sooooo good. Mine made six very large enchiladas that even my kids liked! Really good.

Grandmother's Pound Cake II
This was really yummy! I scaled it down to make just one loaf and it turned out great. The only change I made was to add a pinch of salt (I used unsalted butter) and 1/4 tsp almond extract and 1/2 tsp vanilla extract. It turned out really dense and yummy, and the crusty top and sides were my favorite part! Oh, I also subbed almond milk for the regular milk. Will definitely make this again.
