Fast Rice Pudding

This recipe doesn't stand up to "traditional" rice pudding recipes, but I'm giving it 5 stars because I don't think it was intended to rival regular rice pudding. If you want the taste of rice pudding and a quick dessert that's tasty, this is the one! You can even make it with fat free evaporated milk and it still ends up being tasty!

White Chocolate Fudge

Great recipe! I thought it was a very tasty fudge and a nice departure from regular chocolate fudge. I don't like nuts, so I did use chopped apricots instead, but otherwise made the recipe as written, and it turned out great!

Modenese Pork Chops

My grandfather's from Modena, and this is how we cooked a lot of our white meats, including pork. However, I do normally use olive oil, not butter. Just for fun, I tried this recipe instead. The butter does add a little more flavor, so I've started using a mix of both oils.

Beefy Chinese Dumplings

This is a truly excellent and tasty recipe. The dumplings are a little work intensive to put together, but since they only take about 5 minutes to cook, the prep time doesn't matter. I boiled my dumplings the first time I made them, and now that I have a steamer, I steam them, not being a fan of fried dumplings. I did take a few short cuts with the recipe. Instead of the carrot, onion and Chinese cabbage, I used a slaw mix that had broccoli shoots in it, that saved a significant amount of prep time!

The Real Mojito

Really excellent recipe, everyone loved it! I did use natural sugar instead of white, but that's just because it was what I had on hand. Great stuff, and so much better than any other Mojito I've ever had!

This pie is so good that it should be illegal! I left the nuts out because I don't like them and used fat free sour cream and it still turned out unbelievably delicious!!!

Broccoli Salad I

The overall taste of this salad is really great, but the first time I made it, I followed the recipe as stated and it was too watery. I think 6 tbsp. of vinegar is too much. I reduced to 4, and I also substituted fat free sour cream for some of the mayo and I liked it a lot better. I used "real" bacon bits from Costco instead of sliced bacon.

Corn and Black Bean Salad

I really didn't care for this recipe. Maybe it's a personal taste thing, but I didn't think the balsamic vinegar and the white sugar were a good combination with the southwest flavors of the rest of the ingredients. I think the corn added plenty of sweetness without the balsamic and the white sugar. Next time I'll just try leaving out both and adding a little olive oil for moisture.

Blackened Fish

This really an incredibly fabulous blackened fish spice mix! I use it now to make all sorts of things! The amount of pepper is too much for my taste, I cut the amount in half and increased the amount of paprika, but I only recommend that you change the recipe if it's too spicy for you, because it's a great blend. Thanks!

Baked Kale Chips

I was skeptical about this recipe, but I wanted a low fat, low cal snacking option, and boy am I glad I gave this recipe a try, these are DELICIOUS. It is very difficult to get the saltiness level correct. I think next time I'll make them with no salt at all and see how they taste. As with other reviewers, I would also say you should eat them right away, they definitely don't keep. But don't hesitate to try this recipe, you won't regret it. Thanks!

Cookies 'n' Creme Fudge

Really excellent and easy to make. It doesn't stay fresh for long, so make sure it all gets eaten the day it is made. Which is fine, because it is a good excuse to keep munching more!!!

This recipe is easy, healthy, and unbelievably delicious and flavorful. What more could you want? I definitely agree with previous reviewers that you should plan on doubling the recipe for the marinade, but otherwise, I wouldn't change a thing!

Swiss Chard with Pinto Beans and Goat Cheese

I can't say enough about how incredible, how wonderful this recipe is! I am, however, giving it 4 stars, because in order for it to be a 5 star recipe, you really have to do as many other reviewers suggest and use black beans instead of pinto beans. This recipe has become a "regular" in my house, thanks so much for posting it!

Tim's Green Bean Casserole Extraordinaire

This recipe is a fantastic idea and a welcome change from traditional green bean casserole. I would give it five stars, but as the recipe was, it was a little flavorless for me, so like a lot of reviewers, I added bacon and also added a little (about 2 tbsp.) feta cheese. That seemed to take care of the blandness. I also used twice the amount of butter that was called for in order to completely moisten the corn flake crumbs. I'll be making this again and often. Thanks for the recipe!
