Butternut Squash Soup
YUM! My husband and mother-in-law don't even like squash, but they both thought this was really good, too. I cut the fat a little bit by using 2 Tbs. of butter instead of 4, and using 1 package of low-fat cream cheese, rather than 2. SO good.
