Bacon Quiche Tarts
These are so easy and fun - and taste great except that I am not crazy about commercial biscuit dough. I am going to try next time making my own biscuits as the base and use the same topping. Filling is yummy and just like little quiche fillings - looks like a lot more effort than it was, and puffs up perfectly!

Chicken Chipulos
This is good comfort food, but I think it was better with the following changes: corn tortillas instead of flour, cumin or taco seasoning in the chicken mixture, garlic (I used 5 cloves) sauteed with the onions before mixing into the chicken mixture, and about 5 tablespoons of chopped fresh cilantro mixed into the chicken mixture. I also added a layer of tomatillo salsa when layering the dish - and some chopped tomatoes on top right underneath the cheese. The beauty of this dish is that it is something to be adjusted with this and that depending on what you have around, and it is a forgiving casserole type dish that can take different versions well. My husband loved it!

White Bean and Lamb Soup
Fantastic soup - perfect for a fall dinner (or lunch) with a glass of red wine and some crusty warm bread and butter. The feta cheese really makes this stand out and pairs so well with the lamb, if you don't like feta you could use a good parm, but I really recommend a good creamy feta. I added some white pepper, but otherwise excellent as is!
