Cornish Game Hens with Garlic and Rosemary

Very moist and absolutely delicious. The only change I made was to turn up the oven to 400 and cook a little longer until the hens had browned. I'd also recommend throwing a little more garlic on the pan... my kids went through the roasted garlic like it was candy.

Chili I

Never had a chili quite like this, and while the ingredients are a bit different, the combination of flavors is awesome. I tweaked it just a little... added a little more meat, used 2 decent sized chopped jalapenos (with the seeds), and at the end, added a little water and flour just to thicken it slightly. Everything else was done exactly to the letter. The heat was perfect for my family's tastes, and the beer/coffee/cocoa give it a wonderful flavor. This is now my favorite chili!

Mulligatawny Soup I

I did not have any apples on hand, so instead I added a (small) handful of dried cranberries, to try give it a little of the fruit and sweetness an apple would have added. Not being a fan of heavy cream (and especially not the calories!), I upped the flour to 2 tablespoons. Also added a handful of chopped fresh spinach, and a clove of garlic. It's wonderful straight off the stove... can't wait to try it tomorrow when the flavors have had a chance to blend!

Bread Machine Rolls

Easy to makes, and delicious straight out of the oven. For an italian meal, I've thrown in dried rosemary, thyme, sage (all together and/or separately) along withgarlic and onion powder for what we jokingly refer to as 'Simon & Garfunkle' rolls... they are delicious!

Spiced Pot Roast

This an unusual and tasty way to make pot roast. I've tried it with a couple of different types of chutney, but so far my favorite is with cranberry chutney. Also highly recommend throwing some fresh carrots and potatoes into the pot for the last 1 1/2 hours of cooking.

Authentic Thai Cashew Chicken

I thought this was excellent. Easy to make, and allows for a little 'personalization' in terms of heat, veggies, etc. I agree with other reviewers that you should cook the chicken first, and then add back in when the vegetables are done.

Hot Chipped Beef Dip

I did double the beef on my first try, simply because my family loves meat. Made this for a party appetizer, and my entire family thought it was great. Very easy to make.
