30+ yrs auto mechanic experience,40+ years cooking experience. Most of my cooking experience is from watching MOM cooking our favorite meals. DAD is in charge of making "menudo", a beef tripe dish, very traditional Mexican dish, very good for the morning after partying, all-niter, etc. I am happily married to a wonderful 'blondie',"Mikki, to whom I owe my life and my heart for the last 16+ years. She's nursed me back to health after an almost tragic auto accident 4 years ago, some people said I should have been dead, I just tell them I'm the luckiest person alive.
My favorite things to cook
I really enjoy cooking breakfast. I especially enjoy making "migas", a great dish made from eggs and corn tortillas and salsa. I, also, have a very good recipe for "Texas caviar", which is made from black-eyed peas and vegetables.
My favorite family cooking traditions
Menudo, tripas, fajitas, "elote", or grilled ears of corn, MOM'S home-made tortillas, and carne "asada", which is pork butt in a red chipotle sauce, are some of my most traditional "family dishes", I can remember and enjoy fixing.
