Banana Pudding IV

Definate keeper! I used low-fat condensed milk and it was plenty sweet... also did a double layer of nilla wafers and bananas.... Will make this my official 'nana pudding from now on!

Butterscotch Brownies I

Would give it more stars if I could! A wonderful change from regular brownies....sinful! Definately double the recipe and increase the vanilla to 1T. I used 4 oz of butterscotch chips and 1/2 C caramelized walnuts.....Definate keeper and hard to resist eating the entire pan by yourself!

Brisket with BBQ Sauce

This might have been better if it had been cooked in the crock pot...the meat came out tough and the sauce totally overpowered the taste of the brisket... was too "katsupy"... we paired this with the Southwestern Pasta Salad, roasted corn and a bottle of Allagash Curieux so the meal was still good but could have been better with a better meat dish.

UGH.... guess we are not beet fans after all.... the salad was great... the walnuts were excellent but the vinaigrette was NOT what we were wanting.... NOT a keeper in this household.

Southwestern Pasta Salad

This had a wonderful flavor and a nice new twist on a cold pasta salad...make a day ahead as the flavors get better with a time. I used 1.5 T chili powder and that was over powering so will scale back on that. Would definately take to a potluck dinner.

Cauliflower with Dijon Sauce

I chose to brine the bird 24 hrs in a mix of Kosher salt and honey.... excellent. Also stuffed a sliced orange into the cavity.

Mushroom Cube Steaks

Was skeptical to be honest when trying this with the mustard "paste" but it was actually a nice twist on a typical Southern dish.... the boys loved it so I would definately make it again. Had to substitute a can of sliced mushrooms for the fresh but it was still very tasty.

Marinated Tuna Steak

This was excellent.... I lightly seared the steaks in butter leaving a beautiful pink center in a black iron skillet.... they were perfect. Served with roasted asperagus and a side spinach salad with thinly sliced pears and toasted walnuts drizzled with balsamic vinegar.... my 15 year old LOVED the meal!

Kielbasa Alfredo

This was easy and very tasty.... instead of using a jar sauce I made a Knorr Alfredo sauce and tossed it all together with egg noodles. Now we have a new way to use kielbasa!
