High Temperature Eye-of-Round Roast
Like others I thought this would MAYBE be good. It was outstanding. I had a 2 pound roast. I cooked it at 475 for 18 minutes. Then turned the oven off and let it sit for almost 2 hours. It was more on the mid rare side. I had to bring it up to mid well for my family. Believe it or not I did this after I sliced it in the microwave! Still extremely juicy and flavorful. I did smear BETTER THAN BOUILLON beed flavor on the outside of my roast along with garlic, salt, pepper and CREOLE seasonings. Made the best au Jus around. I poured the au Jus in a skillet added water a little bit more BETTER THAN BOUILLON and rice flour (we are gluten free). Gravy was fantastic. I will be making this FOR SURE again. My roast HATING husband gave this a 9 out of 10. He has NEVER eaten more than a bite of roast in 12 years I have been with him! That says a lot.
