Pumpkin-Oatmeal Raisin Cookies

These were very soft and cake like... I made these alterations: To reduce the fat and add fiber, I doubled the pumpkin (I used one 15 oz can of pumpkin) and used only 1/2 cup butter, and omitted the nuts. I also used 1/2 all purpose 1/2 whole wheat pastry flour. Overall, a tasty cookie if you really like pumpkin and cake like cookies!

Baked Zucchini Chips

I guess I would need a mandolin to make these thin enough to get crispy. My zucchini still tasted a little bitter even with the added garlic powder and parm cheese.

Peanut Butter Noodles

A great combination of ingredients- I topped mine with chopped raw sugar snap peas instead of onions. I used ground ginger (1 TBSP) which created a little too much ginger flavor for my taste- will reduce the ginger next time.

Oatmeal Pancakes II

These were very tasty and smooth! Adding vanilla really made 'em taste good. I used whole wheat flour instead of AP. My only complaint is that they turned out a little flat- I like my pancakes fluffy.

Cottage Cheese Pancakes

These were a little bizzare- parts of the cottage cheese melted, and they took longer to cook than regular pancakes. Anyway, these are an acquired taste!

Dark Chocolate Cake II

Believe it or not... I used HALF the sugar, and added dark chocolate chunks. Incredible and delicious! I halved the recipe (I baked it to satisfy my chocolate craving), knowing I wouldn't want to share! I drizzled a melted chocolate glaze over the top.

Vegetarian Chickpea Sandwich Filling

I tried this using garbanzo beans, and again with Canellini beans. I LOVE it with the Canellini beans! Very smooth and delicious! Beats the tuna smell any day. :-D

Working Mom's Hamentashen

Delicious and easy! I used a variety of all-natural preserves for the fillings, (apricot, blueberry, and strawberry), and chocolate chips for fun. The dough was a little dry, but worked out fine when I added about 1/4 cup water. I used only whole-wheat flour. A BIG BIG hit with my family!

Chocolate Chocolate Chip Cookies I

I've been baking cookies from scratch for over 15 years, and these are THE BEST ONES I HAVE EVER MADE, HANDS DOWN! Incredible right out of the oven. I'm having people over tomorrow, and they will worship me forever once they bite into my new favorite cookies. Big fat chewy chocolate chip cookie, you can bow down to these!!!! :-D

Grilled Eggplant, Tomato and Goat Cheese

I made this in my grillpan. I salted both sides of the eggplant and let it sit for about 10 minutes before grilling. Turned out soo delicious! Made it with a side of spaghetti w/ marinara sauce.

I didn't add ANY sugar, used applesauce instead of butter, cinnamon roll instant oatmeal packets, and added raspberries. Tasty and chewy out of the oven- a newfangled breakfast treat!

Banana Coconut Loaf

Wowsers. Usually quick breads taste better the next day, but this one tasted amazing right out of the oven. I used 3/4 cup coconut, 1/4 cup butter and 1/4 cup applesauce, added 1 tsp vanilla, 1 tsp cinnamon, used only whole wheat pastry flour, and 1/2 c brown sugar and 1/2 c white. Will bake again, every time I have leftover bananas!

Downeast Maine Pumpkin Bread

This tastes 100% better the next day! I was soo surprsed, after reading all of its wonderful reviews, that it didn't taste that good 10 minutes out of the oven. But the next morning, deliciousness!! I used 1/2 c unsweetened applesauce and 1/2 cup oil, 1 C brown sugar, and 1 C white sugar. I'm sure it would be delish with chocolate chips...

Caramelized Baked Chicken

I used 1/2 cup ketsup and 1/3 cup honey, and cooked the sauce on the stove top, and then put in thinly sliced boneless skinless breasts. I put it in the 400 degree oven for 15 minutes, and finito! My boyfriend thought it was tasty. He is eager to eat it again very soon!!
