About this Cook
I'm the eldest of four and learned my cooking basics from my wonderful Mum, though nowadays my Dad rules the kitchen. I've always enjoyed trying new recipes and finding new uses for larder staples. I'm known for whipping up a meal when it looks as if we have nothing to eat - and the results have been "interesting"!
My favorite things to cook
Soups are one of my favourites - so easy and the results are pretty good. There's usually something you can add to make it work, even if at first it doesn't seem quite right. I love trying new recipes - there aren't enough days in a lifetime to make all the things I've clipped out of newspapers! I'm one of those sad people that reads recipe books for fun.
My favorite family cooking traditions
Mum's "Cut-And-Come-Again-Cake" - a crumbly fruit loaf that reminds me of home. Mum's cheesecake recipe, made with sieved cottage cheese and jello. One of the things I'll really miss now that I live in the US is our annual family BBQ at Manor Farm. Everyone brought different meats to grill and we had so many varieties of bread, salads and desserts. Wonderful!
My cooking triumphs
The best Christmas turkey ever. I roasted it upside down, no stuffing inside (of course), and it was absolutely perfect. The best part was that it was the first time I had cooked Christmas dinner for my parents. I was Queen of the Kitchen that day! And from allrecipes - Old Fashioned Coconut Cream Pie made for my step-daughter's birthday. Worked like a dream and she will love me forever!
My cooking tragedies
Trying to make bread using a Tupperware bowl (you're supposed to put all the ingredients in then move the bowl round in a circular motion.) Total waste of time and energy and the bread didn't work. Other than that I think all my disasters have been salvageable! I'm a big believer in "what the diners don't know won't hurt them"!

Surprise Cake
What an amazing chocolatey flavor! Everybody loved this cake and nobody guessed the secret ingredient (one of the guests thought it had Pepsi in it!) I used the recipe without making any changes. It was easier than I thought from my first read-through and I'll definitely be making it again. I didn't make the frosting but I'll try it next time. Great cake!

Old Fashioned Coconut Cream Pie
I wish I could give this recipe more than 5 stars! I'm a Brit and had never even tasted coconut cream pie before, let alone made one! My step-daughter wanted one for her birthday and - never one to shy from a challenge - I checked here for a recipe I thought I could go with. Having read the wonderful reviews, I amended the recipe as follows: I used a whole can of coconut milk and made it up to 3 cups with 1/2 and 1/2. I used 2 eggs plus a yolk, replaced the flour with 1/2 cup of cornstarch and followed TRISKELE's advise and microwaved the custard (5 1/2 minutes, whisking well after every minute - so easy and worked like a dream.) I only toasted the coconut for the topping (couldn't find the frozen stuff so I used the bagged kind) and I agree with Julie - don't spoil this wonderful pie with CoolWhip! Get your mixer out and whip up a carton of cream with 2 tbls of confectioners sugar and a teaspoon of the best vanilla essence you can find. CRXGURL said there's a bit too much custard so I used a 10" graham cracker crust - the custard quantity was perfect and we got an extra slice of pie! My step-daughter was over the moon and I'm sure I'll be making this many more times in the future. Thanks for a fabulous recipe!
