About this Cook
About me? These things are always so hard to write. I'm 31, married and a mommy to one adorable almost-three-year-old. I work full-time as an Admin Assistant for a lobbying firm. I stay busy with work, chasing my kid and enjoying time with family and friends. I love to cook, bake and mostly I love to EAT! I also love to read and scrapbook, but finding time for either is a challenge these days. My favorite place to be is on the beach or near water and I'm learning to enjoy other outdoor adventures as my son grows and wants to see EVERYTHING. I am a camera fiend and will take a picture of most anything if it holds still long enough. Except food - haven't gotten into that quite yet, but I'm sure it's in the near future.
My favorite things to cook
I LOVE sweets - I am currently obsessed with cupcakes. I haven't had the courage to try too many of them yet, cause I'm trying to lose weight, but baking is definitely the next (or first) arena I want to master. I loved grilled anything, and we grill often at our house. I love love love bbq ribs - my husband laughs at how many I can put away. Slow-cooking is starting to become a favortie because I love coming home to a wonderful smelling house and minimal dinner prep. I wish I was Italian and had the authentic recipes of my grandma or something, cause the hub and I do love our Italian food too...gosh, I don't think I make anything that I don't love to cook :)
My favorite family cooking traditions
A big one from my family is the amount of baking that goes on between Thanksgiving and Christmas - tons of breads, cookies, etc. I haven't quite gotten on that kick yet with my son, but we've done cookies and brownies for daycare at different holidays and he loves it. My mom & dad weren't the best cooks, but when it comes to baked goods, they are pros and I am totally spoiled and kind of a food-snob. My mom made every birthday cake I can remember, and probably the ones I can't - with the exception of his 1st birthday, that is a tradition I plan to continue as long as he'll let me.
My cooking triumphs
The first recipe I made from Allrecipes was for Jalapeno Popper Dip, and everyone went crazy for it. That was a big hit. I don't know that I'd call it a cooking triumph exactly, but my son's 2nd birthday cake was kind of a big deal for me - a Spongebob SquarePants legs, arms and googly eyes as well. I was quite pleased with it, and so was he.
My cooking tragedies
I can not count the batches of burnt garlic bread or muffins in the oven (so much for my bakery ownership dreams). I have made a few things here and there that didn't go over so well with the hubby, but he's rather picky. Can't remember anything too terribly tragic - no fires or explosions...yet!

Easy OREO Truffles
Fantastic! Yummy! I made these for Valentine's Day and they are excellent. I used reduced-fat cream cheese and reduced-fat Oreos so I didn't feel SO gulity for eating them! After rolling all the balls, I chilled overnight and that helped with the dipping. I used milk chocolate Toll House chips instead of Baker's, but I think the center is what makes this goodie so good anyway! I did have to add about a tablespoon of half and half so I could mix them with my hand mixer. No food processor :( Enjoy!

Buttercream Icing
I would give this 4 1/2 stars if I could! I used it on my son's 3rd birthday cake, and it was fantastic. It was yummy and easy to frost with and pipe. Per my mom's method, I added a tiny bit of lemon extract in addition to the vanilla to cut down on the shortening-y taste. Also, added cocoa powder and additional milk to make chocolate frosting. It held up in the Florida heat and humidity very well!

Honey Roasted Red Potatoes
Had these last night for dinner, and they were fantastic! I didn't have dry mustard, so I added chili powder, some cayenne and some thyme for extra herb flavor. My only complaint is that they didn't get really crispy, but I think I was just using too many potatoes at once. Thanks for sharing a great recipe!
