Turkey Tetrazzini II

Reviewed: Dec. 2, 2009
I sauted onion, garlic and celery in the butter, then finished according to recipe (adding a little salt and pepper to taste). I used fresh grated parmesan cheese on top and the stuff in the green can mixed in and it was fantastic. Even my picky eater said "I LOVE this stuff". It tasted great the next day too.

Cream Corn Like No Other

This was SOOOO good! I used fresh white sweet corn. My husband thought it was too sweet with 2 TBS of sugar, next time I will cut sugar in half.

Candied Carrots

These were super easy and super delicious! I used Splenda brown sugar, which tastes great with only half the sugar. They taste even better the next day after soaking up the butter and sugar. Wish I had doubled the recipe!

Famous Butter Chicken

Reviewed: Sep. 20, 2009
This was such an easy recipe to cook. It was by far one of the best chicken recipes out there! I only used 1 stick of butter and it was plenty. About half way thru cooking time I spooned the melted butter all over the chicken. I also used partially frozen chicken breasts (only outside defrosted so that cracker crumbs would stick) and cooking time was perfect. Entire family loved it!

I love this tea. Every time I make it, I end up drinking the entire pitcher by myself in a few hours! I use half sugar and half sweet n low to reduce the calories and make in my Mr. Coffee Tea maker.

BBQ Fried Chicken

Reviewed: Sep. 2, 2009
All I could think when eating this was that this is a flavor mother nature never intended. I like just about anything, but even I thought this tasted strange. My 7 year old wouldn't touch it and my 15 year old said it tasted ok covered in mashed potatoes, but didn't eat more than 1 chicken finger.

Broiled Tilapia Parmesan

EXCELLENT, quick and easy! The only change I made is that I added a little italian bread crumbs to mixture. My husband who doesn't really like fish too much went on and on about how delish this was!

Candied Chicken Breasts

Reviewed: Mar. 9, 2009
This got a "WOW, this is REALLY GOOD, you should make it again!!" from the entire family (which doesn't happen very often--kids!). I didn't want to add extra calories by breading and frying chicken, so I skipped that step all together. I replaced the water with pineapple juice as others have suggested and used Splenda brown sugar. I reduced the amt of brown sugar since I used the juice. I removed foil and added pineapple about 15 min before chicken was done. Once chicken was done, I took the very runny sauce and pineapple from pan and thickened it on stove top with corn starch and served sauce on top of chicken.

Salsa Chicken Burrito Filling

Reviewed: Mar. 9, 2009
I used 3 large frozen boneless chicken breasts, cooked in crockpot for 4 hours on high. I used the taco seasoning recipe from this site and added a can of Rotel tomatoes (partially drained). Once chicken was done, I took it out and shreaded it. I put about 1/4 cup of liquid back into chicken and mixed it up. Then I took the remaining liquid and pureed it. Cooked pureed mixture on stove top with a pinch of cocoa and a pinch of garlic powder and a little corn starch to thicken it. Then I put chicken mixture and cheese in flour tortillas and rolled up, put in pan, poured sauce on top and sprinkled cheese on top, put in oven till cheese was melted. My family loved it and fought over the last one!

Easy Spicy Chicken and Rice

Reviewed: Jan. 21, 2009
This was just so so. I was really excited about this recipe. I am a huge fan of chicken and rice and a huge fan of Ro-Tel tomatoes. I figured "what could be better than combining the two?". I was wrong. I guess I was hoping it would taste a little more like a King Ranch Casserole.

Pepper-Honey Cedar Plank Salmon

VERY GOOD!! Didn't change a thing. It was a little spicy when tasting alone, but was perfect once on the salmon. It had just the right amount of spicy sweet flavor. I put salmon on top of whole grain rice, then poured a little of the left over sauce on top. FANTASTIC!

Guy Approved Meatloaf

Reviewed: Jan. 12, 2009
My husband said this is the best meatloaf he has ever had (and he is a big meatloaf lover and has had many years of experience). I made exactly as written. (with the exception of removing foil half way thru cooking) My crackers were Cheddar Jack Cheese-Its and BBQ sauce was Kraft Spicy Honey. My only regret is that I didn't double the recipe!

Smokin' Scovilles Turkey Chili

Reviewed: Jan. 12, 2009
I love chili on a cold winter night. I am on a diet and thought I would have to give it up.. not with this one. Used lean ground Turkey and there was very little fat and low in calories. I couldn't tell it wasn't beef in the chili. Tasted great! (I had to use jalapeno pepper because my local store was out of habanero peppers- It was still PLENTY spicy!) We used the left overs the next day for chili dogs.

Buffalo Chicken Fingers

Really good. The only change I made is that when the chicken was almost done, I put a buffalo sauce made with Franks hot sauce and a little butter (cooked to combine flavors and thicken a little) on top and put back in the oven for the rest of the time.
