About this Cook
I live in China and I love it. I love the people. I love the culture. I love the food.
My favorite things to cook
Living internationally, cooking Western food can be a challenge so I often find myself experimenting with local ingredients and flavors. I enjoy learning Chinese cooking methods and am trying to learn how to cook real, authentic, Chinese food. When I crave a taste of home, I often like to attempt new recipes. Baking sweets (cakes, cookies, breads, etc.) is my specialty, but I also enjoy cooking savory dishes as well. Though I have some good stand-bys, I am always looking for new recipes to try. One challenge, however, is that a lot of recipes call for ingredients that I can't find here, so I am often forced to make substitutions. As a result, I am always looking for recipes that use all fresh ingredients and don't require specialty items or spices.
My cooking triumphs
Red velevet cake for my dad's birthday...Mmmmm....
My cooking tragedies
Trying to use dried beans instead of canned...I almost burned down my apartment building when I was boiling them. The burned bean smell was in my apartment for weeks!

Gnocchi II
I really enjoyed this recipe. Gnocci is one of my stand-bys at Italian restaurants and I'm excited to find a recipe to make at home. The texture of the recipe is a little bit different than what you'd get in a restaurant, but the taste is great. They are a little 'fuzzy' around the edges and don't look too appetizing....Cover them with sauce and you are good to go! I would advise other cooks to make sure that the potatoes are mashed until completely smooth (no lumps whatsoever!!)The smoother, the better...I like to make a big batch of this recipe and freeze whatever I don't use immediately. Freezing the uncooked gnocci is super-convenient. If I don't have much time to cook, I can just throw several into a pot of boiling water and heat up some sauce. A very quick and easy meal on the go. Though making the recipe is initially time-consuming, having them on-hand in the freezer is worth the effort!

Chocolate Cavity Maker Cake
This is a great recipe...Very, very, very rich! A chocolate lover's dream... I usually make this recipe for friends' birthdays and everyone seems to enjoy it. You only need to eat a small slice though...They are not kidding when they call it a cavity-maker!

Roasted Chickpeas
These didn't turn out for me at all! I followed the recipe exactly, but for some reason they all burned to a crisp and were inedible.
