I tried this with substituting applesauce for oil (1/3 cup like recipe states). They cookies are good, but they are very flat and gooey. I like my cookies a little on the "rare" side, so maybe that is why they are gooey. They don't come off of the pan very easily, but they taste wonderful!

I did not care for this dish at all. The honey and lime are very strong and take away from the enchilada-ness of it, I think. It was very time-intensive, and we were very disappointed. Maybe we just weren't prepared for how strong it would be.
