About this Cook
I have had a very eventful life, worked 10 years with delinquent kids, then off to Africa where I served as an evangelical missionary. Back to the States where we ran a food ministry for 15 years! Now my life is pretty uneventful - just working and fixing up our little retirement home. Kids all grown up and one adult grandchild and another little one! I just subscribed to this site a couple of months ago and am enjoying it immensely as I 'rediscover' cooking for just my hubby and I. Thank you so much to all of you who take the time to submit and review recipes. I'm lovin' it!
My favorite things to cook
Due to feeding anywhere from 16 on up for years and years, I've always loved the 'fast' plentiful recipes. Now I am enjoying lots of Mexican foods and just trying out things I see on this site. FUN!
My favorite family cooking traditions
Not too many traditions due to living in a foreign country and living on a Boys/Girls Treatment Center for years. The ONLY recipe passed down in our family is Chocolate Popcorn - go figure!

Quick and Easy Green Chile Chicken Enchilada Casserole
Made it exactly like the recipe (but didn't char the tortillas). FABULOUS! How can something so easy be so good?

Apple Bacon Tomato Soup
Followed this exactly! My ONLY mistake was not doubling it! It 'sounds' so weird, but believe me - it is wonderful. Kind of a gourmet vegie soup (sort of). Thanks for this one!
