Mexican Corn

Great idea - I used frozen corn and no butter, but the reason I didn't give this 5 is because it needs more herbs, maybe some chili powder and pepper and it would be phenomenal. Otherwise great great idea for serving up corn.

Taco Bake

It was a great concept, I just played with it based on my own preferences. I browned ground chicken with onions and garlic and taco seasoning. I then added garlic cream cheese to make the meat creamy and add salsa instead of tomato sauce - makes a wonderful creamy spicy mixture. I cooked small shell pasta and once drained I mixed it with sour cream and then layered the pasta like you would a baked ziti. Some salsa on the bottom to stop sticking, pasta mixture, meat sauce and then shredded cheddar and repeat - cooked 25mins at 375 covered and 5 mins uncovered with a couple minutes on broil - garnish with green onions, sour cream and minced jalapeños. YUM.

Spanish Beef and Rice

Okay, I changed this quite a bit but I give it 5 for the base and the ability to play with this dish - also the simplicity. I used ground turkey, I pan fried with onions and garlic, added cumin, chili powder, chipotle chili powder, and paprika. I added 1.25 cups of rice, 1/2 cup tomato sauce, 2.5 cups of water with 2 chicken bouillons mixed in. I also added black beans, Mexican red beans and corn - brought to a boil, then covered and turned down to low for 25 minutes. Served with shredded cheese and sour cream - LOVED IT. If you want it spicy add cayenne or hot sauce before simmering.. YUM.

Slow Cooker Chicken Taco Soup

I knew it had to be excellent to have so many good reviews. The only thing I changed was the diced tomatoes with green chilies - I can't for the life of me find these in CDN grocery stores, so I used a chunky salsa - still tasted great! I added sour cream, cheese and minced jalapeños. YUM. Oh, I also shortened my cooking time - 2 hours on high, 3 on low and in the last hour I shredded the chicken which fell apart basically on its own. Thanks for a great hearty and healthy recipe!

German Potato Salad

This was a really good dish. I had it saved for so long and was hesitant but kept reminding myself that I love vinegar on fries. It was tangy and sweet - didn't change a thing. Thanks for sharing a great recipe!!

Baked Tomatoes Oregano

Excellent recipe! I used plum tomatoes, more garlic and I had cheddar, mozzarella, provolone, feta and parmesan on hand, so I used all of the above because more cheese just means extra goodness! Broiled them for only a few minutes and my guests mouths were watering.

Sweet and Spicy Pumpkin Seeds

Mexican Lasagna II

This is a great idea but I changed it quite a bit as per other reviews and my own taste. I added cream cheese to the ground beef/taco seasoning mixture which also had pan-fried garlic and onions in it (cream cheese idea is from the taco pasta shells recipe on this site) and I added corn and black beans - not refried beans. I layered a mixture of sour cream and salsa on tortillas and then my beef mixture and then shredded cheese - then tortillas, repeat 2x. Baked at 375 - 20 mins covered and 10 minutes uncovered. I add sour cream, green onions and minced jalapeno on top. Delicious and so filling!

Cola Onion Pork Chops

This does make a really tender pork chop, but I have to agree with others that this pork needs some marinating and much more seasoning. Next time I will marinate in a dry rub and browning is also a good idea. It is also important to use thick chops as I lessened my cooking time because I had smaller chops and they still dried out a bit - however, I recommend to everyone to cover your chops for the first 1/2 of the cooking and that saved my chops from completely drying out. All in all a good idea of simple ingredients but needs a bit more seasoning.

Spiced Pumpkin Seeds

I made these last year and never reviewed them and I just made them again and they're great. Make sure to well salt your seeds as I get a little scared and end up under salting them, but it can all be fixed adding a bit afterwards. :) Thanks for the recipe!

Breaded Toasted Ravioli

A really great idea! They were like crispy pasta bites that were amazing dipped in a bolognese sauce. I recommend having some sort of dip sauce with this (bolognese/alfredo)and using quality ravioli. I added parm, Italian seasoning to my breadcrumbs and they came out great - not a single left over.

Roasted Spicy Mustard Potatoes

These were pretty good. My photo already made the main page! I knew the time was not enough to cook potatoes so I cooked for 1hr and 10 minutes. To avoid drying I did add a bit of olive oil and I covered for the first 45 minutes - this will ensure they do not dry out. I made mine pretty spicy but you can eat with sour cream or mayo if you want to cool it back down. All in all a good dish.

Prosciutto Wrapped Asparagus

The only reason I didn't give it 5 is because adding feta to this makes it amazing! Just roll up some feta with the asparagus - and bake for 10-15 minutes - no need to turn... like I said: Amazing!

Tacos in Pasta Shells

What a fantastic idea! Combining my 2 loves: Mexican and Pasta! I used salsa since taco sauce here comes in tiny jars so that wouldn't be very economic. I also topped with sour cream, green onions and minced jalapeños - so so so good, I ate the leftovers for breakfast!

Sweet, Sticky and Spicy Chicken

This was absolutely delicious and I was quite the skeptic. I added flour like others said and I didn't double the sauce because it was only for 2 servings, so I left it. I think I would double it in the future because it tastes so good on steamed rice. Great recipe!!

Panzanella Salad

This was excellent! I had fresh Italian bread so I was worried about it getting soggy, but it held up well because of the toasting. I used roasted garlic olive oil and I think this helped a lot since I love garlic. I didn't use olives because the bf doesn't like. I also used roma tomatoes. This was so tasty. :)

Gourmet Chicken Pizza

Excellent recipe. Great variation on classic pizza. I used red peppers instead of tomatoes for personal preference and added some crumbled bacon and garlic. I cooked my chicken in Frank's Red Hot sauce also. It was so good even the boyfriend who detests veggies, enjoyed it. A keeper!

Pork Chop and Feta Skillet

These were excellent! I used fresh rosemary and added minced garlic. I also marinated them for a couple of hours first. Served it with a modified version of Greek Style Potatoes on this site. Great dinner!

Greek Style Potatoes

Very good recipe, but I changed it a bit as per another Greek recipe on this site. I basically combined the 2. I scaled this down for 2-3 people. I had no lemon, used fresh rosemary and italian seasoning. I cooked it at 400F for 1 hour covered and 15 minutes uncovered. Then I added crumbled feta and cooked for 5 more minutes, finishing with a broil. YUM. I picked this recipe over the other because of your use of the chicken bouillon - really adds flavour. Great basis and next time will add onions!
