This was a very easy recipe. I added the refried beans and used flour tortillas for two layers and also a layer of round corn tortilla chips too. The amount of cheese the recipe calls for is not enough. I used probably over 2 cups of cheese easily. Some Colby Jack and some shredded Mexican blend cheese. A dallop of guacamole and sour cream made it even better. But really needed hot sauce. I think this is a really great recipe if you ever have left over taco meat.

This dish was very similar to a chicken pot pie. It was pretty good. Quick and very easy. I actually added a can of vegetables for color and taste. I think the next time I will add cheddar cheese. The pan size specified is much too big for only 2 chicken breast. I did 3 and it the pan was still too big.
