Spicy Chicken Enchiladas
These enchiladas were great. I went light on the sauce which kept the tortillas from getting to soft. I also left out the jalapenos, but when I cooked the chicken (which I shredded) I mixed in a 1/2 teaspoon each of cumin, oregano, and chili power to give the heat and flavor the chicken.

Banana Crumb Muffins
All I can say is OUT OF THIS WORLD!!!!! Made NO changes!!! The recipe made about 10 muffins...I think I filled them to high, so if might have made a whole dozen. Topping put this over the top. Can't wait to make again!!! TX

Chicken and Bacon Shish Kabobs
These Kabobs were wonderful. The chicken was very tender; mushrooms and pineapple were great. I wanted to keep mine lean so I didn't use any bacon. I also used a Foreman grill instead of outdoor grill.
