Sunday Brunch Casserole

This was absolutely fabulous!!I didnt really change much except I cut the eggs down to 10 and added 3/4 cup of milk and also added some ground sausage I had on hand from making pizza the night before...Also added a bit of the cheese to the top 10 minutes before it was done.My boyfriend ate 4 large pieces!!!Great recipe..Thanks.I will be making this for Christmas breakfast!!

Stuffed Green Peppers

Im sorry to say I did not like this at all.I am used to not cooking the meat before baking.I like my stuffed peppers stuffed with a meatloaf type stuffing then baked.I figured I would try this to see if the cooking method was any better but I didnt like this at all.They were dry and crumbly due to cooking the meat before hand.I will stick to my old recipe from my mom.To each his own,I guess.

Spinach Bacon Quiche

Im really sorry to have rated this only 3 stars but this recipe should be tweeked for 2 reasons..way too much milk made this watery and runny,also the eggs didnt set well because of it.Also,the crust was ultra soggy,almost gooey!Next time I make this I will pre-bake the crust and cut the milk to one cup instead of 2.I also sauteed the onions in a teaspoon of the bacon drippings and added them to the mix instead of raw onion.Hopefully that will make this better.I will definitely try this again being sure to add my changes!

Corned Beef Hash

This was excellent..I used chicken broth instead of beef broth and the subtle chicken flavor complimented the potatoes and didnt take away from the corned beef flavor.I also used my leftover corned beef.I cannot stomach the thought of canned beef..Sorry.It was easy and delicious.Thanks.

Quick Chicken with Asparagus and Provolone

This was delicious.The only thing I changed was adding swiss cheese instead of provolone..The swiss went perfectly with the asparagus.It was even great the next day with a small salad.Yummy!

Calamari

I would just like to add that a good dipping sauce would be a spicy marinara.Just make or buy your favorite marinara and add crushed pepper flakes.Serve the sauce at room temperature or cool.The more pepper flakes the better.The lemon wedges will cool the heat.
