About this Cook
The one thing everyone who has ever met me knows... I love cats! My husband and I have 2 of the most beautiful furry babies in the world and we love them more than anything! Even food, which is really saying something! ha! Also, I'm very into step aerobics, biking, reading, and I recently started rollerblading again after a 10 year or so haitus. We are both food fanatics.... we love to eat, eat, and eat! So it's now my job to try to allow us to do what we love so much without us packing on the pounds! We have been married for 6 years now but I never really took an interest in cooking until recently. My husband is half Italian and he would do most of the cooking, but now I have taken over and he just makes the occassional (and delicious) homemade pizza on the grill.
My favorite things to cook
I LOVE baking!! The only downside is, my husband is not a fan of cookies/pies/muffins/desserts in general, so all the sweets I make I have to eat myself! So it's both a good and a bad thing. Also, Polish (which I am), Italian (which my husband is), Asian and Mexican foods are all our favorites.
My favorite family cooking traditions
During Christmas, Thanksgiving and Easter my family makes all of our favorite polish dishes along with the staples like turkey and stuffing. We make huge batches of cabbage rolls, pierogies (both potato and blueberry ones), borscht... and my baba's unique apple pie, which is baked in a cookie pan instead of a pie tin with a chewy dough that is absolutely DELICIOUS! I'd eat it every day if I could.
My cooking triumphs
My triumph is a broad one: finally figuring out how to make delicious, flavorful food healthy, low fat AND edible all at the same time. Even desserts, which pleases me to no end. Chicken, applesauce and low fat cheeses are now my allies (though not necessarily in the same dish!), together we make some amazing meals! I haven't made anything in the last month that my husband hasn't told me to save the recipe and make again!
My cooking tragedies
A couple years ago I tried to start cooking and went a little overboard with my changes to recipes... I tried to adjust them to make them extremely low fat/calories and NOTHING turned out well. Everything I made for a month straight went straight into the garbage. Thankfully I am THROUGH with that phase!! Now I have found the near-perfect balance of fat vs. taste and things have been MUCH better ever since.

Polish Cabbage Noodles
Even after reading all the reviews about how people were skeptical of this recipe but then tried it and thought it was delicious, I went through the exact same process and luckily I also found the end result to be so good! I added shredded carrots and a tablespoon of sugar to the sauteing veggies, and after they softened a bit I threw in the cooked noodles and some chicken broth, covered and simmered on low until the cabbage was tender. I also used light butter. My husband of course said "where's the meat?" but agreed it was a really good side dish!

Fruit and Cream Phyllo Pie
Everyone I've made this dessert for has loved it, they don't even realize that they're eating a much healthier dessert than usual! I usually make half of the recipe in a pie pan, which means half the phyllo dough, and I fold over all the edges to make a strange looking little tart thing. Strange, but delicious! I only use egg whites and not a whole egg, and I use light cream cheese. I usually top half with fresh chopped strawberries and the other half with raspberries/blackberries and blueberries, so people can choose whichever they like better. And I use spray Crisco butter instead of brushing the sheets with butter, much faster and lighter this way! I top it with powdered sugar after it's finished baking. Mmm!

Wonton Soup
I absolutely love wonton soup and eat it by the bucket at any chinese food restaurant... and now this recipe ensures I can make my own delicious soup at home! With the amount of filling this recipe calls for, I make about 25-30 wontons which I find needs about 8-10 cups of chicken broth - because I love broth (half from a box and half from boullion cubes). I've used both chopped up cooked pork, and raw ground turkey and they were both good. To the broth, I add half a box of sliced mushrooms, a thinly sliced carrot, a bit of chopped cabbage and a couple chunks of ginger. I boil the wontons separately in water, then I boil the broth with all of the veggies and ginger in it, then remove the ginger chunks and add the wontons. Even my husband loves this, and he's usually not a big fan of wonton soup.
