Marriage and childbirth have thrust me into the role of purveyor of grub. Hence my title, the reluctant chef. I grew up in a big family and learned only the basics of cooking. Joined the site to expand my horizons....and keep my family from eating mac&cheese every night.

Fortunately, my husband will eat nearly anything. So, even that which I consider a dire tragedy is still dinner to him.

Mixed Vegetable Casserole
This is a snap to whip up (and I do often) for a non-cook like me, and even the kids eat it up.

Carrot-Sweet Potato Mash
This was my first sweet potato recipe....I think that next time, I will cut the sugar probably in half, I thought it was WAY too sweet. I also thought it was missing something, so I threw in 1/2 tsp. cinnamon, and that was just what it needed. I left out the raisins, too. All in all, it was pretty good and my hubby and two year old both ate it without protest.
