Almond-Topped Fish

I added chickpea to the dish and a pinch of paprika- the nuttiness of the beans go well with the almonds. My father loved it.

Bread Pudding II

I made two, using raisin bread, rye bread and some breakfast rolls. I but both in round pyrex dishes. I added frozen chopped mango and raspberry jam to one. Delish!

Phyllo-wrapped Halibut Fillets with Lemon Scallion Sauce

I used fluke, the phyllo gives the fish a nice crunch like fried fish- but better for you. The sauce was too lemony for me so I added Parmesan cheese and a little mayo- was heavy but good.

Mexican Baked Fish

What a great way to mix it up! I love this recipe- I used just a smear of a spicy salsa and a little jarred chipotle, lots of shredded cheddar and crushed toasted white corn tortillas I had left over. The fish was really spicy- but delicious. I served it with avocado and a mixture of rice, beans, and corn. Will make again.

Baked Spaghetti Squash Lasagna Style

First time having Spaghetti Squash, I could not believe how delicious it was. Great diet food- you really feel like your eating Spaghetti! The leftover are suprisingly good- unlike reheating pasta.

Italian Sausage Soup with Tortellini

I made this in the crock pot. Browned the sausage first and then put everything in the crock pot. I cooked the tortellini just before serving and stirred it in. It was awesome. Next time I will try it will hot sausage.

Slow Cooker Chicken and Dumplings

The whole family loved this. I used whole chicken breast, without cutting them up and used a fork to shred it just before serving. I also took another members advice and used one can Cream of Chicken and One can Cream of Mushroom. It's perfect for a cold day.

I am picky about my hummus, but this recipe is awesome. I took another reviewers advice on the tahini and started small. I even left some sans tahini for a healthier snack- it was delicious.

Baklava

I looked this recipe up after having authentic baklava in Greece this summer. I wasn't expecting it to be this easy or delicious. One tip- to "butter thoroughly" I melted the butter in the microwave and brushed it over the phyllo layers with a basting brush- it worked well and spread evenly without tearing. Excellent! Everyone went back for seconds!

Baked Slow Cooker Chicken

I took other users suggestions and lined the bottom of the crock pot with veggies instead on foil. 2 Onions, 2 Carrots, and 2 Celery Stalks, chopped. I added about a cup of Chicken Broth. The Chicken was delicious, extremely most and tasty. I ate some that some, and use the rest to make chicken soup.

Roasted Pork Loin

I followed another reviewers tip and browned by seasoned roast in garlic and oil, then placed it in the crock pot with white wine and added some celery, carrots and onions, for 8 hours. It was delisoushly moist with a light flavor. I didnt have any rosemary, so as other reviews suggested I substituted with Basil and Thyme. It was a big hit!
