These muffins are pretty straight forward and tasty! Easy to whip up when I've got some fruit I need to use before it goes bad. Like many of the other reviewers did, I added some Vanilla and next time I think I'll try using apple sauce instead of the olive oil. I find that I much prefer Raspberries to the Strawberries, but that just personal preferences. :)

Excellent bread with two major downfalls. Not enough cheese and jalapeños. We like things very spicy though (we are from the southwest). We also are fiends for cheese, so that is also a little downfall. Other than that the bread was very tasty and rose perfectly as long as you mix it with WARM water not hot.

Excellent!!! We follow the directions to a "T," but added green chillies and onion (sauteed them both). We also had twice the amount of Monterey (1 1/2 cup) and a 1/2 cup of cheddar (great with Mexican/ southwestern food). We also baked these and did it right out of rolling them (did not freeze), but we did think that freezing them would be good and deep frying would also be good for a change of scenery and for saving food and economic value.
