Quick Quiche

This was quick and easy. I added a few ingredients, some suggested by the author. I think this woudl be a five if there were more seasonings. I added chilli powder, garlic, etc., but I think even an adobo sauce or maybe even something like saffron. The bacon really did add good flavor- I would just suggest to add to it. In addition, I added cheese (grated parmesean) to the batter and a jack/cheddar mix (shredded) on top.

Black Bean Huevos Rancheros

Very good. I used jarred salsa and should have followed the recipe and used fresh. I would also suggest topping with the hispanic goat cheese (sp?) and placing under broiler for 1-2 minutes for a browned, cripsy finish. Love teh black bean mixture- so much better than refried beans.

Seared Ahi Tuna Steaks

This recipe was good. I like to add a citrus cutney- a fab place here in Sonoma, the Eldorado Kitchen, uses a Blood Orange one. I'm gonna try that next time.

Crispy Chicken Strips

The chicken stayed tender and not dry, however the flavor was not fabulous- a little bland for my liking even after adding garlic and using flavored potatoe flakes. Still looking for the PERFECT chicken strips recipe.

Spinach Ranch Salad

This recipe was very quick and easy. The combination of ingredients was super tasty! I added fresh ground pepper and a little lemon juice to give it a bit of a kick, and I used white onions which worked as well.
