Roasted Butternut Squash and Garlic Lasagna
Really good! Tastes really cheesy without all the mozzarella :) I also put some spinach in middle layer for added health benefits, and it worked great. Not sure about the whipped cream on top of the lasagna, and I may leave it out next time, but there WILL be a next time!

Aloha Quick Bread
Yum Yum Yum... I doubled the recipe and used half butter/half applesauce, and then used half white/half brown sugar. Also used pecans instead of the walnuts. I baked one large loaf as well as 4 small loaves and they all came out perfect; beautifully browned and very moist. Will definitely make this again! the neighbors are in for a treat! THANKS!

Banana Muffins with a Crunch
Easily the best muffins I have ever made... I have never had any luck with muffins, eventhough I bake a lot and everything else turns out great!!! I decided to try this and am so glad I did! I did follow the directions from the other reviewer who said to add the butter to the SIFTED dry ingredients, then the egg/milk mixture. They are moist, tasty, and the perfect brown color. I am even sending some to my husbands board meeting tomorrow! Thanks! This is a keeper! Note: I went and bought 2 new non-stick muffin pans today before baking and did a test: One pan of 12 with muffin cups and the other without any. Definitely use them (I used metal baking cups). The pan without the cups stuck, but came out with some coersion...
