Chewy Chocolate Chip Oatmeal Cookies
One of the best oatmeal cookies I've made to date. My changes: used egg substitute due to allergy, and only used 1 cup brown sugar (no white) which was plenty! Can't imagine them with more sugar.

Easy Fruit Cobbler
A delicious and very simple cobbler with a soft cake-y texture. I used 1/2 whole wheat flour and spread the peaches out across the top instead of just in the center. I also only baked it for 50 minutes in high altitude.

Zucchini Herb Casserole
This recipe was delicious with the following modifications - double spices and garlic (but not the salt!), use about 2 cups cooked long grain brown rice, add 1/2 diced bell pepper, and sub yellow onion for the green. I also used 2c. of mozzarella and colby cheese instead of cheddar.
