About this Cook
I started cooking, beginning with just helping Momz a bit to now being the self proclaimed Head Chef in the family kitchen, out of necessity when I was diagnosed with Ulcerative Colitis during high school and began eating Gluten-free. Recently I've been attempting the Specific Carbohydrate Diet and desperately search for recipes or try to convert old ones to fit the horrible restrictions of this eating regime.
My favorite things to cook
I lovelove to bake just about anything...mostly because it feels like such a challenge. You never know if your bread or pie or cheesecake will turn out quite right...
My cooking triumphs
Momz showed me a picture of "April Fools' Day Sushi" for a laugh- Rice Krispie Bars, gummi worms and Fruit-by-the-Foot cobbled together to resemble California Rolls. When I attempted them myself, I decided to imitate my favorite type of sushi- Sake Nigiri- with Krispie Bars, Peach-O's and a bit of chocolate to stand in as the wasabi. ^_^ Qué rico!
My cooking tragedies
My college roommate and I declared we would bake a cheesecake for our party later that evening but started far too late in the evening to let it set fully in the oven...nor enough time to let it cool in the fridge afterwards. ^_^

Peanut Butter Easter Eggs
I had such fun making this recipe and then watching people's faces while they ate these tasty desserts! After reading comments about them being too sweet, I substituted natural peanut butter- with no added sugar- and found the sweetness level to be spot on. I had some trouble dipping the peanut butter balls in the chocolate after they cooled though- the chocolate didn't stick all that well. I had to go back over the holes later with chocolate on a spatula. But still a great recipe!
