I'm a vegetarian and have been for the better part of my life. However most of my family and friends are meat-eaters. In my home, myself and my other half take turns with the cooking, he is a chef-in-training and a meat lover. Especially with our busy schedules, it can become quite a challenge to keep meals interesting for both of us.

Hot or Cold Vegetable Frittata
Based on other reviews, I added some extra spices to get a bit more flavor. I made them for a work meeting and cooked individual frittatas in muffin pans. They got compliments from everyone and no leftovers!

Vegetarian Moussaka
great recipe, but i found that i did not have enough of the vegetables to make more than one layer of each.

Mouth-Watering Stuffed Mushrooms
These are really good. I made them exactly as the recipe calls for and received a lot of compliments from some usually picky eaters.
