Although the actual recipe doesn't tell you much about cooking the chicken, I read the various reviews and adjusted my recipe as follows: I sauteed the chicken breast... once the rest of the main ingredients were added and had simmered for about 10 minutes, I took the chicken out of the soup, let it cool slightly, tore the chicken breast into small pieces and then threw the chicken back into the soup and let it simmer for the additional alloted time.
*Or the 2nd time I cooked it, I had rotiserie chicken that I threw in with the rest of the ingredients.
*Either way... this recipe is a keeper. (I did throw in a can of rinsed black beans).
