Spinach and Potato Frittata

I've never made a frittata before. This recipe is a keeper. I read the reviews and followed a couple of the suggestions: reduced the amount of pototates, flavored the potatoes with Mrs. Dash, and increased the spinach. In addition, I cooked the frittata on the stovetop for 5 minutes and then transfered it over to a 400* oven for an additional 10 minutes. This is a great hearty brunch!

Cinnamon Hazelnut Biscotti

Since I didn't have any hazelnuts I altered the recipe and used almonds and cranberries instead. I didn't really care for the almonds but loved the cranberries. I'll need to try the original receipe sometime soon. I took these to a party and everyone loved them... "much better than the store-bought version" was the compliment of the evening.

yummy! I didn't have any applejuice. We like our oatmeal sweet.. so I added 2 tablespoons of brown sugar to the apples.

Baked Potato Soup I

I felt that this recipe needs something. It's kind of bland. Its a good start. I'll need to work on adding additional ingredients or maybe next time using half milk and half chicken broth.

Chicken Tortilla Soup V

Although the actual recipe doesn't tell you much about cooking the chicken, I read the various reviews and adjusted my recipe as follows: I sauteed the chicken breast... once the rest of the main ingredients were added and had simmered for about 10 minutes, I took the chicken out of the soup, let it cool slightly, tore the chicken breast into small pieces and then threw the chicken back into the soup and let it simmer for the additional alloted time. *Or the 2nd time I cooked it, I had rotiserie chicken that I threw in with the rest of the ingredients. *Either way... this recipe is a keeper. (I did throw in a can of rinsed black beans).

Raspberry and Apricot Rugelach

The dough is similar to my mom's Russian version of the recipe. Wonderful. It was gone within 1 day. I had doubled the recipe. I used the original filling for the 1st half. Raspberry preserves are a wonderful touch. For the 2nd half, I used apricot preserves and then sprinkled a mixture of chopped walnuts with brown sugar.

The Best Rolled Sugar Cookies

My new favorite sugar cookie recipe! My family had used the Crisco sugar cookie recipe for years. However, I don't cook with shortening. So decided to try a new recipe. They were crunchy once they had cooled (I was a little bit worried). I used the sugar cookie icing found on this website to decorate all the cookies. Once they sat overnight... they were so soft and tasted wonderful.

Health Nut Blueberry Muffins

This is the lightest & fluffiest healthy muffin I've ever tasted! I made a couple of substitutions as I didn't have all the ingredients. I used brown sugar instead of white sugar; doubled the wheat germ and removed the oat bran. I didn't have any blueberries... so I cut up an apply and tossed it in the recipe along with raisins. I tossed the extra muffins in the freezer and plan to have them as an on-the-go-breakfast.

Honey Wheat Muffins

This was a great healty muffin based recipe. After reading the various commnets saying that it was bland by itself... I doubled the honey plus added raisins and pecans and chopped granny smith apples. They were absolutely delicious!
