Manicotti Alla Romana
This recipe is fantastic!! I made a few alterations...instead of making the manicotti, I did stuffed shells, not the huge shells, but the medium sized ones. Also, my grocery store didn't have any fresh basil, so instead of buying basil, parsley, parmesan, and garlic, I bought Oliveri pesto sauce, which contained all of these ingredients and saved me a lot of time (and money). I only used about 2 1/2 tablespoons of the pesto sauce, and the flavour of the shells were fanatastic! Thank you so much for this recipe...it was a great hit!!

Most Excellent Sandwich
I tried this the way that the ingredients say, and it tasted great! I used to make something very very similar....instead of cheese on top, I used to put fresh slices of avocado...very tasty and extra healthy. Try it and see...you will love it!

Leftover Squash Muffins
Hearty recipe...I also used 1 1/2 cups of squash, and it turned out great! I found the batter to be very thick, however it tastes really good! I had enough for 12 muffins, and the bottom of a round pan, which I cut up into bite sized pieces.
