Cream Of Chicken Soup

I read another review about adding corn and making this soup into a chowder, so I did that. Then, I looked at Chicken Corn Chowder recipes on allrecipes. They all included potatoes. So, I added a couple of tbsps of instant potato mix. That also thickened it instead of the corn starch. I also used fresh garlic instead of garlic powder, and added some additional spices (thyme and Italian seasoning) this was a quick meal for myself so I just made a bologna sandwich to go with it ;) Loved it :)

Mock Tuna Salad

This was really, really good! I was skeptical about it actually tasting like tuna salad but I was definitely proven wrong :) I didn't have green onions or spicy brown mustard, but I just omitted the onions and used dijon mustard in place of the brown mustard. My favorite tuna salad recipe has white pepper in it, so I added some of that to this salad so it might taste a little closer :) Overall, really good and I will definitely make this again.

Chiles Rellenos (Stuffed Peppers)

This was really good! I followed the recipe exactly but only for one pepper. I hadn't had this before but I thought they looked really good at the restaurant so I decided to try it at home! I really like regular stuffed peppers anyways. It didn't take me as long as the recipe says but probably because I made only one. I will definitely make this again! If anyone knows, are they typically fried? Because the ones I've seen weren't...? Thanks :)

Easy Lasagna II

So easy! I used ricotta cheese except for cottage cheese, and also used ground turkey for ground beef. We both loved it! I also used a lot of fresh garlic.

Asian Noodles with Chicken

Omitted the cilantro; added carrots, broccoli, garlic; used noodles from the asian food department of the grocery store -- they worked great! love this dish. Used low sodium vegetable broth and teriyaki sauce instead of stir fry sauce.

Beef Nacho Casserole

I loved this! I added refried beans to the bottom of the casserole, and topped it with some sliced black olives...kind of turned into a crunchy enchilada bake but without the sauce! Also substituted sour cream for the Miracle Whip, as others suggested. I really really liked this dish but I don't think my boyfriend did so much because he's not really into casseroles...but in any case, I really liked it but I will have to wait a long time before I can make it again :( Can't wait for leftovers for lunch tomorrow :)

Grilled Romaine Salad

I tried grilled romaine hearts at a restaurant and loved it so much I had to make it at home! I didn't use shallots for the vinaigrette - i just made a simple 2:1 balsamic vinaigrette with added honey, a little lemon juice, garlic, and italian seasoning. I topped the hearts feta cheese and red onion. I know this isn't the recipe but I still wanted to put up a review. Also, I don't find it necessary to put the olive oil on the lettuce before grilling - it's just added calories, the lettuce is fine on it's own. A lot of the bitterness in the thicker parts of the leaves go away with cooking.

Creamy Italian White Bean Soup

This is such a quick recipe for such an elegant soup! I loved this. I used chicken broth in place of the water and added more garlic. I also used a dollop of sour cream when I added the blended mixture to the soup. It gave the soup a great color and added a subtle creamy taste! I will definitely make this recipe again...it took me only 20 minutes, start to finish.

Campbell's® Tuna Noodle Casserole

This is so easy! I cut the recipe exactly in half and it was great - 1/2 of the recipe is perfect for two people. I added some parmesan cheese also. I will use fewer peas next time, but that is just personal preference - I'm not a huge pea fan and all of the casseroles I've had before seemed like they had fewer peas too. I will definitely use this recipe forever.

Wilted Spinach with Cherries and Goat Cheese

I loved this recipe! Like another reviewer, I too was hesitant about the cherries but they really do make the recipe. I served this over some whole wheat pasta for a quick dinner. I also omitted the onions and mushrooms and used a lot of garlic; also added italian seasoning and olive oil to the pasta to make it really Mediterranean-flavored.

Easy Slow Cooker French Dip

So good! I used dry onion soup mix instead of condensed, which I will NOT be doing next time; I don't think I'll add any soup mix. I will only use a whole onion for flavor in the cooker. But I used a nice dark beer and some beef bouillon with the rest of the seasonings and the au jus was really tasty! I also put some garlic cloves in with it and spread the cooked cloves on my french bread which was really, really good. I will definitely use this recipe again and always for making french dips.

Crunchy Tuna Turnovers

These were pretty good, but I used canned crab instead of tuna fish. I also omitted the olives and lemon pepper. Other than that, I followed the recipe and they came out great, except they weren't very good the next day. I wouldn't suggest eating the leftovers - with crab meat, anyway.

Garlic Cheese Chicken Rollups

This is now my personal favorite way to make chicken! I don't think my boyfriend liked it as much as I did, but he still liked it okay. I didn't get the cheese spread, so I just added some minced garlic to some leftover cream cheese, as well as added some mozzarella cheese to kind of mask the cream cheese flavor (as my boyfriend doesn't like cream cheese) and it came out great! I loved it and definitely will be making this again.

Black Bean and Corn Quesadillas

This is soooo easy and good! I didn't make it this complicated, or vegetarian. I just used a little bit of leftover canned chicken breast, black beans, corn kernels, cheese, and only used some leftover mole from Mexican take-out for seasoning. So easy, so good, I loved it! I will be making this again. **Update: Followed recipe exactly this time, but somehow overlooked the brown sugar...? Really good, will make it again!

Kids Favorite Meatloaf
