Butternut Squash Bake

This is an excellent recipe! The only thing I did different was cutting the onion into wedges instead of mincing it -- I think it gave the dish a better presentation. I will definitely use this recipe again! Even my boyfriend, who isn't very fond of squash nor blue cheese, liked it a lot!

Seared Ahi Tuna Steaks

This is a reliable recipe for seared ahi. I don't use the whole peppercorns, but I do use coarse-ground black pepper and add white pepper. This seems intimidating but be sure to use fresh tuna and it will come out excellent!

Pita Chips

This recipe is so fun! You're easily able to make all different kinds of pita chips, and they taste delicious :) The varieties I made were salted, onion and pepper, garlic herb, and parmesan. I left them in my oven for 7 minutes exactly and they came out perfectly. I'd love to serve these at a party with some hummus and toum. This recipe makes plenty of pita chips!

Sweet and Sour Drumettes

Terrific recipe; we all loved it. I followed others' suggestions and added cornstarch and hot chili sauce (Sriacha). I cooked the sauce ahead of baking to ensure it would thicken, and it did. It turned out perfect - nice and spicy with a bit of sweetness! I also used half honey and half sugar, and used red wine vinegar; I used chicken breast sliced into strips instead of drumettes. I served this with brown rice and stir fry vegetables. This recipe is definitely a keeper!

Vegetarian Lasagna

Pretty good! If I could I'd give it 3.5 stars but 4 works since it helped me to use up all the vegetables in my kitchen, and I love lasagna! I used pasta sauce instead of the diced tomatoes, and halved the amount of vegetables since reviews said there were too many. Instead of dicing the eggplant, I sliced it thinly so it would help to "layer" the dish, and I didn't use instant lasagna noodles (I used a half-box of regular noodles, like in traditional lasagna recipes), and I used canned spinach. I also added garlic, canned sliced mushrooms, onions, chopped green bell pepper, and some different spices but it was still pretty bland - add extra spices! With those changes my lasagna came out pretty good, I would definitely make this again!

Black Bean Lasagna

Very good! I used flour tortillas and Mexican-blend cheese instead of cheddar; I also added the avocado afterwards because I'm not too fond of warm avocado. I will definitely use this recipe again, it's very easy and turns out great! For the salsa I used a chipotle-flavored kind and that gave it great flavor.

Unsloppy Joes

I loved this recipe! I couldn't believe how close the sauce tasted to meaty sloppy joes, it was perfect! I used red wine vinegar instead of white vinegar, but that was the only change I made. I would definitely use this recipe again and I highly recommend it.

Quick and Easy Alfredo Sauce

Awesome recipe! Reliable and easy. I scaled it down for only one serving (myself), and based off that I used 1/2 TB less butter; however I used the exact amounts of the other ingredients. I also used fresh garlic instead of powder, added 1/2 slice of provolone cheese, and a dash of nutmeg. I wouldn't recommend adding the provolone like I did unless you like very hearty alfredo sauce; it was creamy-overload for me, in my opinion. The smoky provolone coupled with the nutmeg gave the sauce a warm, rich, and savory flavor. I had this over noodles with a breaded chicken breast and some roasted zucchini and tomatoes on the side.

Skillet Sweet and Tangy Pork Chops

This was a nice and easy meal; however, I probably would never make it again. The flavor was good but to me, was reminiscent of the BBQ sauce from the famous fast-food restaurant specializing in roast beef sandwiches. I used red wine vinegar instead of white because that was all I had, and added a bit of black pepper. The sauce was good over the pork chops and rice, though my boyfriend said that it wasn't a recipe he'd request again in the future - and I agreed.

Baked Falafel

Delicious!!! I followed the recipe, but I left out the coriander because I had none. I really liked this recipe! It was my first time trying falafel and I decided to wrap it in a pita and made a gyro sandwich with cucumber, red onion, tomato, and tzatziki sauce. So good, I will definitely use this recipe again! The falafel was good by itself and good in the gyro - great meatless meal and very filling.

French's® Crunchy Onion Pork Chops

Delicious and so easy! My boyfriend loved them. So nice for a stress-free and quick dinner! I used thick-cut, boneless pork chops (about .75-1in) and cooked them at a little under 375 for 35 minutes and they came out perfectly. I also added a bit of black pepper, garlic powder, and Italian seasoning. As one reviewer stated, they would have baked crispier if they had been placed on a rack. Nonetheless, I would definitely use this recipe again; I highly recommend it for a novice cook.

Home-Style Scalloped Potatoes

I used this recipe to make scalloped potatoes for my first time. They turned out really good! I halved the recipe and ended up with a little too much sauce. I will definitely use this recipe again; I also used low-fat substitutions and they were still very tasty!

Addictive Sweet Potato Burritos

I didn't particularly find these "addictive." Matter of fact, I was tired of my burrito by the time I finished it. I love sweet potatoes and burritos but this just didn't do it for me. I did as others suggested and used black beans instead of kidney beans. I used all the ingredients except soy sauce (which I don't care for - too salty), used Mexican blend cheese instead of cheddar (cheddar would have probably been better), and I thought the mustard gave it a strange taste. I wouldn't make these again but I'll admit that they were fun to try once :)

Watercress Soup

Good stuff! I bought some watercress on a whim and this was my very first time trying it! :) I really enjoyed this soup - the recipe doesn't really need any tweaking. I look forward to the next time I decide to purchase some watercress!!

Vegetable Quesadillas

I really liked these! I made just one for myself and used two soft taco-size flour tortillas. Because some reviews said this was bland, I added some garlic and a little bit of Extra Spicy Mrs. Dash. I also had sour cream on the side, and used Mexican blend cheese instead of the other two listed. Overall, very easy and tasty recipe...great for those nights when you just don't feel like spending all night in the kitchen!

Vegetable Shepherd's Pie

Great recipe!! I changed just a few things. I didn't use the additional carrots, and I made "my own" mashed potatoes instead of following this recipe's ingredients. I scaled this down for 2 servings; with that said, I used one finely-chopped tomato and 1.5 tbsp ketchup (which also replaced the sugar in the recipe) instead of the diced tomatoes and tomato sauce. Also, because I had no onions but had a shallot, I used that instead. So, with those changes, this recipe was verrrrry good! I was surprised at how filling it was. I would recommend this recipe to others! Loved it.

Three Bean Slow Burn Chili

Excellent recipe! I made this for a Super Bowl Chili cookoff and won the contest! I halved the recipe but still used three cans of beans and it was perfect size for my 5-quart slow cooker. I followed the advice of other reviewers and used some jalapeno in place of habanero - it had the perfect amount of spice! I also used chipotle-flavored salsa and put one chipotle pepper in the chili; the flavor was subtle but it really added to this recipe. I used all low-sodium or "no salt added" ingredients for this, and only about 1/4 of the taco seasoning and it didn't come out too salty. I highly recommend this recipe if you want a really hearty, dinnertime chili with a kick.

Roasted Potatoes with Greens

Delicious! Even my boyfriend, who doesn't really like spinach, loved this! Adding the spinach not only tastes great but makes the roasted potatoes look nice, too! I will make this again.
