Mom's Zucchini Bread

This recipe needs a few changes. I mix and match with a recipe from one of my cookbooks. I think this recipe has too much sugar and oil. You can do with about half, especially if you're health-conscious.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

Loved, loved, loved this!! I didn't need the cheese -- I liked it as-is! I didn't use stewed tomatoes, but fresh tomatoes and added enough chicken broth to just cover the bottom of my 10-inch skillet (I will use just a little less next time, though). I also added frozen roasted corn (as corn was suggested by the top review). I also used olive oil instead of vegetable oil. This is now one of my favorite ways to eat zucchini! I will definitely make this again, I could eat it alone for dinner!

Black Beans and Rice

Very good, and I made it even easier! I used brown Ready Rice and just a touch of chicken broth instead of vegetable broth. It made this dish ready in about 5-8 minutes! I also added a couple tablespoons of tomato sauce, to make the rice taste more like Mexican-style rice. I will make this again! I loved it.

Easy and Elegant Pork Tenderloin

This was really good, but my crumb breading kind of came out like stuffing and kept falling off. However, the recipe was still very good, I will make it again. I did sear my pork loin beforehand and added more seasonings.

Mexican Rice II

Mmm! So good! I even messed up the recipe -- I used half of the oil with the intention to make half of the recipe but ended up using the whole cup of rice...so I continued with what I had and it was still very great! I will use this recipe again.

Mango Salsa

My new favorite! I only used red wine vinegar instead of the rice vinegar -- only because I read the recipe wrong :P But I will make this time and time again. I really loved the red pepper flakes with this! If you have the time, let it sit together in the fridge for at least an hour for the flavors to blend. A must-try!

Rosemary Chicken with Orange-Maple Glaze

Much easier to make than I expected. I only added cornstarch to thicken the sauce, but other than that I followed the recipe but added a little garlic too. Served with rice and a broccoli-pepper stir fry and it was great! Oh, I also followed another review to put a little flour on the chicken before searing. I would suggest to do that only if you want to -- I don't think it made much of a difference.

Pan-Seared Chicken Breasts with Shallots

I love this recipe! I've made it a few times and was looking through my recipe box to find a chicken recipe for tonight and came across this :D Thought I'd leave a review. I too "feel like a total chef" with this :D It goes with just about anything. Be sure to use a wine that you like to drink -- it makes the chicken taste so much better! Also try to throw in fresh garlic cloves.

Hudson's Baked Tilapia with Dill Sauce

Great fish, great sauce! I used the Cajun Spice Mix recipe from this site to make the cajun seasoning -- that recipe is great, too! I'm not a fish lover and I'm looking forward to making this again. I didn't even really use too much of the sauce because I liked the fish itself so much...but I used the leftover sauce for a pita sandwich the next day. Really, really good recipe! I will definitely make this again and again. I used a little bit of Old Bay as one reviewer suggested. I spread a little bit of melted butter on top of the fish before I added the seasonings, and cooked the filets in a foil packet on the grill. Lost no moisture, tasted great!

Cajun Spice Mix

Great cajun seasoning! However, I too cut the salt in half, and used Italian seasoning instead of oregano (because I didn't have plain oregano). I used this for the Hudson's Baked Tilapia with Dill Sauce recipe from this site (I reviewed that, too). I didn't add the red pepper flakes but I wish I had once I made it! It would have added the perfect amount of heat -- don't hesitate to use it if you like spicier cajun seasoning! I will be using this recipe a lot in the future! One of the best simple recipe I've found in a while. I'm going to end up using it on everything ;D

Roasted Broccoli

I really just thought this tasted kind of weird. Maybe it's just not a flavor I've become accustomed to -- but I wouldn't make this again. I too cut back on the seasonings but it still really wasn't what I wanted. I guess I'll stick to plain steaming or lemon juice :) Sorry for the poor review -- at least everyone else liked it ;D

Greek Chicken

This was good! I didn't use a whole chicken, but I used breasts for the two of us. Tasted great, easy to make. Letting it marinate makes a huge difference.
