I live in LA County with my boyfriend and we both work and go to school. I really enjoy cooking meals for us and trying new things. Sometimes it's difficult because he's kind of a picky eater. ;) But, I still really enjoy making dishes that please both of us. I am into music, fashion, exercise, cooking, healthy lifestyles, and learning.
My favorite things to cook
I love to cook just about anything. I enjoy cooking dinners the most, and I usually cook typical American cuisine, e.g. salads, seafood, casseroles, pastas, grilling, this and that, etcetera, but occasionally I try something different or ethnic to keep it from becoming boring. I haven't had too much experience baking and I'm kind of apprehensive to begin trying! Baking definitely has more potential for disaster because you have to get the recipe and the cooking/baking just right. I would like to try nicely-presented dishes or really fancy cuisine, just for fun! **Update: I've tried baking and I LOVE it.

I've found that cooking is so much easier than it seems, but it just takes practice! Once you start to actually learn and taste the differences between the flavors you add to dishes, it's all downhill from there!

Mom's Zucchini Bread
This recipe needs a few changes. I mix and match with a recipe from one of my cookbooks. I think this recipe has too much sugar and oil. You can do with about half, especially if you're health-conscious.

'Calabacitas Guisada' (Stewed Mexican Zucchini)
Loved, loved, loved this!! I didn't need the cheese -- I liked it as-is! I didn't use stewed tomatoes, but fresh tomatoes and added enough chicken broth to just cover the bottom of my 10-inch skillet (I will use just a little less next time, though). I also added frozen roasted corn (as corn was suggested by the top review). I also used olive oil instead of vegetable oil. This is now one of my favorite ways to eat zucchini! I will definitely make this again, I could eat it alone for dinner!

Black Beans and Rice
Very good, and I made it even easier! I used brown Ready Rice and just a touch of chicken broth instead of vegetable broth. It made this dish ready in about 5-8 minutes! I also added a couple tablespoons of tomato sauce, to make the rice taste more like Mexican-style rice. I will make this again! I loved it.
