About this Cook
I live in Rainier, Oregon with my husband of 3 1/2 years, our crazy pound puppy, and my 5-year old Quarterhorse George. I enjoy cooking as a way to relax (if I can't ride my horse, that is). Most of the time I only use recipes as a "guideline" as I'd rather make it my own. The only recipes I've followed to the letter are a family recipe for banana nut bread and Grandma Ople's Apple Pie (from allrecipes)... neither one need to have anything substituted for them.
My favorite things to cook
I enjoy using the BBQ to cook up fantastic steaks (I'm a carnivore... :) ) and enjoy making sides to go with the mood. Top it off with a yummy dessert and voila! It's a good thing I work, though, because I cook when I'm bored and we'd all be 400+ pounds!!
My favorite family cooking traditions
Every year we make up a ton of batches of kalua (sp?)... it's so easy to do and takes about a half hour to an hour to complete... It's one that will soon be posted on here. In addition, I enjoy canning all season long with my mom and sister... good bonding time!
My cooking triumphs
I recently made strawberry crepes after I'd had a craving for ones my Grama used to make. They weren't as good as hers but boy they were close. I made sure to share them with the whole family (and my Grama who said they were better than hers) and got the "thumbs-up" all around!
My cooking tragedies
It seems like recently I can't get anything to cook right in my slow-cooker. I think I'm trying to hard to take recipes and make them into slow-cooker recipes that just won't work. I need to try different recipes instead of adapting them to my cooker(s)...

Quick Tartar Sauce
I have made almost this same recipe since our Safeway stopped carrying Nalley Tartar Sauce... I don't use mustard, though. I take 2-3 Tbsp of pickle juice and mix it in. It gives is a thinner consistency and you don't get they mayonnaise-y flavor.

Roast Leg of Lamb with Rosemary
This recipe was so easy to do and it came out fantastic. I'm not a mustard fan so I was a little leery of using Dijon mustard in the marinade, especially marinating it for 2 days as suggested by others. But, even though I could smell the mustard when it was cooking, it didn't have a strong mustard-y flavor. And the lamb itself was so tender and juicy. I added a little more minced garlic and olive oil, as well as some Marsala Wine (just a litte, maybe 1/2 cup) to the marinade. I cooked it at 450 for 20 minutes then because I was kinda time-crunched, I cooked it for 360 for an hour. I would have liked to do it closer to 325 but company came early. Both the legs I did registered between 150 and 160 degrees and it was done evenly through, not bloody. I got rave reviews at Easter. A very good recipe, and a keeper at our house... thanks for sharing!

Easy Broccoli Quiche
I wasn't really impressed with this... the quiche that I've always had (from others baking it) had a more creamy and rich flavor... this just didn't do it for me. I'll probably use either cream cheese or heavy whipping cream next time and maybe add some bacon, but not as much garlic.
