My family loves this Mac N Cheese! I find that it is helpful to stir the mac when it gets out of the oven in order to make everything fairly creamy - it is much easier to reheat if you have leftovers.

Eggplant Rounds

This is a great eggplant recipe. Instead of frying, I baked them. I added 1 tsp seasoned salt, and 1/2 tsp tumeric to the coating. I also brushed the pieces with olive oil, then coated them. I placed them on a baking sheet lined with parcement paper. 400 degrees fo about 30-40 minutes, turning at the halfway point.

Southwestern Bean and Rice Salad

We loved this salad. I added 1/2 tsp crushed red pepper, and doubled the cilantro for our personal taste. I used yellow and orange peppers because that is what I had on hand. Thank you for a great recipe.

Spinach Appetizers

These were a hit!!! I did use seasoned bread crumbs and added 1/2 tsp cayenne pepper for a kick. There were no leftovers....thank you for the great recipe.
