I put loads of spinach, bell pepper, green onion, and shimeji mushroom (Whatever I could find in the fridge). It was so good! Great breakfast. I don't really like mayo so I used yogurt instead (like the other reviewer said) and turned perfect! I also used tofu pie crust to make it healthier. Will make it again :p
