Hi! My name is Becca. I'm a young wife (b-day 3/28/84, married 10/18/08) looking for food with low fat content to please her new hubby! I've used allrecipes to find information on making my favorite dishes easier and I finally decided to join!
My favorite things to cook
I love to bake - cookies, cakes, pies, you name it I love to bake it! I also like to cook easy, low fat, QUICK meals for my fiance and I. I am still trying to decide which I love more - my new hubby or my Crock Pot! :)
My favorite family cooking traditions
Starting a week before Christmas my mom, sister, and I would bake dozens upon dozens of cookies. We had homemade aprons with pictures of bears and flowers on them. One was green with a red pocket and one was red with a green pockets. My sister and I would always argue over who got to wear which one. :) After my mom resolved that we would begin the process of baking - usually double or triple batches - of each kind of cookie. We'd make chocolate chip, butterscotch chip, peanut butter kisses, spritzes, pizelles, sandies, and my favorite, cut-outs. Flour and decorating sugars would be flying around the kitchen, it was hot as you-know-what, and we were cranky from being on our feet all day. However, when we were finished baking and had put all those cookies away in our decorated tins, we felt a sense of accomplishment. My mom would pull out her three-tiered cookie tray on Christmas morning, and I was responsible for laying out the cookies, interspersed with candies, for company.

Almost No Fat Banana Bread
I LOVE BANANA BREAD, but am watching my fat intake. I've used applesauce instead of fat before with other recipes before and did NOT like it, so I was a little worried about this recipe as well. I followed all instructions, but added chocolate chips and 1 TBSP vanilla. It is AMAZING. My sister, who doesn't like banana bread ate two pieces and I had to pry it away from my hubbby. Thanks for the awesome recipe!!

Asian Orange Chicken
I made this recipe last night for my husband and me and all I can say is WOW!!! It was amazingly delicious. I didn't have rice vinegar on hand, so I substituted apple cider vinegar. I also subbed 1/2 C. water with pineapple juice. Served over brown rice with a side of broccoli. Oh my gosh!!

Roast Sticky Chicken-Rotisserie Style
UPDATE: I made this again last night when my hub and I had guests for dinner and it was even better than the first time. I cooked the chicken at 350 for 1.5 hrs and it was just as good as the first time!!!!! (ORIGINAL REVIEW:)DELICIOUS! I used the leftovers to make chicken soup that tastes better than my mom's thanks to all the spices and yummy juices in the pan. I also made myself chicken salad for the first time with the leftover white meat - AMAZING! Thanks for the great recipe.
