Greek Lemon Chicken Soup

Don't get me wrong, it is completely edible, filling and tasty in its' own right. But this is restaurant style and I was comparing to traditional Avgolemono Soup- I think I just prefer it when it comes to Greek styled food.

Peanut Butter Banana Muffins

The consistency was fine- moist and appealing. I also doubled bananas and peanut butter. But if you are using natural PB as I did, you will likely end up with banana flavored doggie bisquits. Go with the Jiff for this one folks!

Blissful Rosemary Chicken

Can you imagine, I couldn't find prosciutto anywhere? So I had a slightly spicier version made with Capriccola. I also stuffed a few baby spinach leaves in each breast. The roasemary spears made for such nice presentation- I hope to use that idea again soon too!

Barley Mushroom Risotto

Very good! Barley is soooo underrated and it is great for Diabetes and High Cholestrol (like my hubby). I added coins of chicken sausage for a one-pot meal. So hearty, and great for winter! If you want to add creaminess you can also add one can of cream of mushroom soup.

Greek-Style Green Beans

I like my tomatoes really well warmed and mixed in as if it were sauce. Also, add a large pinch of mint and this dish takes on amazing dimensions!

Raspberry Peach Cobbler

Also added blueberries to the dough, but didn't have any raspberries! As an additional alteration, I used Splenda Brown Sugar blend in the peach & cinnamon mix. We could eat this morning, noon and night!
