Hi there! I have been married for 12 years and have 3 kids. I love to cook... but I hate to clean up the kitchen after! I think that one of my strengths with cooking is keeping a well stocked kitchen, and being able to come up with yummy meals with the things that I have stocked there. So often I will come to allrecipes.com and type in the ingredients that I want to use for a meal, and find just the perfect recipe. I have tried so many recipes on here that I thought it was high time to join and be able to comment on the recipes... most of which have turned out to be some of my all time favorites.... can't wait to share my cooking experiences with you!

Cottage Cheese Chicken Enchiladas
this was really yummy and good. i didn't have any chicken on hand so i used ground turkey, and it turned out great. i didn't have any chopped green chilies, but i did have a can of rotelle, so i used about 1/2 the can in the meat mixture. that gave it a nice flavor of chilies with the added tomatoes also. i will definitely make these again... next time with chicken, i believe, but it would be good with any meat.

Chicken Savoy
yummy chicken! my family loved it... the kids didn't want the balsamic vinegar, but my husband and I did... i used a lot more garlic... and i seasoned the heck out of the top of those breasts with the oregano, salt, pepper... and I used a basil/garlic blend and parmesan cheese instead of ramano. i put the chicken in the oven half frozen and cooked at 450 for about 50 minutes and it was perfect... served with alfredo spirals and broccoli .... yummy!

Beer Battered Fried Vegetables
mmmmmm.... this was yummy! Absolutely the best beer batter recipe that i've tried so far. As others have suggested, I added seasoning to the beer mixture, which was a good suggestion. And even though some people didn't think dipping in the dry mixture first wasn't necessary, I recommend it just because the wet batter seemed to stick to the veggies much better than if they weren't dredged in it first. (And I didn't let the beer batter mixture sit at room temp for 3 hours either... I used it immediately out of the fridge and after mixing it together and it was fine and dandy).
