Healthy Potato Salad
This was a great potato salad and I am picky with my potato salads! I only gave it 4 stars because I felt I had to make some changes to make it 5 stars. 1-I added a big spoonful of sour cream because it was too mayo tasting. Next time I am going to try replacing 1/4 C of the mayo with the sour cream. 2-I used chives instead of green onions. 3- I added about 1 tsp of red wine vinegar (I think it is better for these kinds of salads than cider vinegar). I omitted the peppers and celery because I didn't have them and didn't add quite as much parsley. I also used about 1/3 of a red onion instead of a sweet onion. It turned out great and everybody loved it. I did use one and a half of the yolks because I don't like wasting food. The kids ate the others:) Thanks Pat for the recipe!

Roasted Sweet Potato Corn Chowder
This is an easy recipe that tastes great and is healthy too. The only things I did different were: used olive oil, fresh thyme, no celery, and a yellow onion.

Tuna Noodle Casserole from Scratch
I didn't have peas or mushrooms on hand but I did have broccoli so I par boiled it and added it to the end mixture and it was fantastic!
