Cream Cheese Frosting II
This is the best recipe!!! I ran out of icing and didn't have enough sugar to make another batch, so I used a can of cream cheese icing...ugh. The store bought can didn't even compare! So lesson learned...take the time to make another from scratch, or double up on this recipe for a 2 layer cake. It also spreads twice as smooth as canned icing. One good idea I tried today that actually worked: Do you have a circular rotating spice rack? I used one of those that I already had in my cupboard to place my cake on, then rotated it as I iced the cake. It was smooth as satin!

Pumpkin Cake III
I used two 9" round cake pans for this recipe and the only change I made was suggested by other readers: cut oil down to 3/4 c. and add applesauce for the remainder. I noticed the CAN of pumpkin did not specify which size can. I believe it is referring to a 15 oz. can. I had a 29 oz. can and that seemed to be sufficient. Tasted moist and amazing! For a pretty presentation, use sliced almonds as petals for daisies, and your favorite colored M&M's, Resses or Skittles candies for the flowers center.

Slow-Cooker Chicken Tortilla Soup
This soup packs some serious heat and tons os flavor! If you love Mexican like I do, try this one. Save yourself work and use a rotisserie chicken. Added black beans and used fritos and lots of cheddar cheese on top. MMMMM!
