This has been one of my favorite drinks for a few years. One way to make this even better and cut back on ingredients is to buy pineapple orange juice. Do 1 part coconut rum to 2 parts pineapple orange with a dash of grenadine.

This was delicious! It was very moist and the Cream Cheese Frosting II from this side finished it perfectly. If you like your pumpkin cake a little "spicier", add 1/2 tsp of nutmeg and cloves in addition to the cinnamon.

I've made this twice now and my kids ate it after the few changes I made. The major one was to put all the sauce ingredients into the blender with a little bit of milk so there weren't any cottage cheese "chunks". I also used some crushed caeser croutons for the topping instead of plain bread. The last thing I'd recommend if making this for kids is to use half sharp cheddar and half american for a milder flavor.
