About this Cook
My name is Amanda and I'm married to Thomas, we've been married for 9 years in November. We go to Happy Valley Baptist Church. Both of us are Saved and actively serve in ministries of our church. Thomas and I together with other couples work in the Junior Church on Sunday Mornings (ages 7-12) and I teach the 1st-3rd Grade Girls Sunday School Class every other Sunday. We have NO children, only Annabell (our dog), and she's enough!
My cooking tragedies
When I first started cooking, my father-in-law, said that it took 2 hours to make chicken legs. So I put them in the oven with the bbq sauce... and 2 hours later... it was so badly burned that you could not even get the legs out of the pan... lol

Baked Pesto Chicken
I cooked this for my family yesterday and they LOVED it! This recipe was quick to prepare, did not have too many ingredients, is completely affordable and tastes great! It has just the right amount of spice, and the chicken comes out of the oven so tender you can cut it with a fork. I could not find frozen pesto sauce though, so I used the pesto you find in the spaghetti isle at the store... it was delish! It will be a new "regular" in our family meals.
