I recently became disabled so lots of time now to stay home. I have always enjoyed cooking and got back into lots of cooking recently. Due to my disability, it takes me about 3 times as long to make any recipe as it normally would, lots of breaks during cooking and preparing, but I love seeing my family enjoy my food so it makes it worth it.
My favorite things to cook
I like to make casseroles and I recently got into making pies. My son is 20 and moved out on his own so I like to take him things to eat at his place so anything easy to transport is great, especially in one dish so the casseroles are great.
My favorite family cooking traditions
daughter helps me a lot. My husband and I take turns on holiday meals but I now always make the dessert because i want to.
My cooking triumphs
Perfect apple pie the first time, also made a chicken and homemade noodle casserole that my dad, mom and family loved along with cornbread and peanut butter chocolate chip pie. I also found that I use Mrs. Espy's enchilada sauce, with chicken and cream cheese enchiladas for a meal my family loves.
My cooking tragedies
I am allergic to onion so I always omit it. Sometimes this causes issues. Also, after that first perfect apple pie, the next 2 were not good. I used different crust so i need to go back to original.
