About this Cook
I started cooking and baking when I was 12. I find experimenting in the kitchen is a great way to relax. I browse recipes to get ideas and modify them to what I have on hand in the kitchen without having to run out to get something special.
My favorite things to cook
Holiday baking is my favorite time of the year. I have been known to make a minimum of 10 to 15 different kinds of fudge and upwards of 20+ kinds of cookies. I am always looking for new holiday recipes to try.
My favorite family cooking traditions
My family is of Norwegian heritage and I have taken it upon myself to become well versed on our family recipes in my generation.
My cooking triumphs
Taking on some of the family recipes for the holidays has been a big thing for me. To have my grandma say that mine are as good as what she makes is a huge compliment!!
My cooking tragedies
Who wants to dwell on these, nothing is a tragedy since we learn from every endeavor!!

Green Tomato Cake
I had such an over abundance of green tomatoes at the end of last year, I was trying to find something I could make out of them. This was an excellent choice! It was a perfect coffee cake and honestly, when l I told people what was in it, they hardly believed me!!!

Quick Quiche
This was a very good recipe to build on. I agree with the post that said they left out the butter. I thought it was a little greasy and next time I make this I would definitely leave that out. But I used ham instead of bacon and added mushrooms. Thanks for the recipe! I'll definitely make this again!

Peppermint Chocolate Fudge
This was a very easy recipe. I made a few changes. I used 2 cups of semi-sweet chips and 1 of white chips. Then instead of melting stovetop, I used the microwave. Put in microwave safe dish and heat for 1 1/2 minutes, stir and then heat an additional minute and stir again. You may need an additional 1/2 minute depending on your microwave. I then mixed in 1 tsp peppermint and poured into 8x8 pan. I put peppermint candy on top and put in the fridge to set. Turned out super! Thanks for the recipe!!
