Italian Eggplant Salad
I made this last year and loved it. I added more balsamic vinegar for my taste. It is a bit sweet, but lovely. I just made it again and decided not to peel the eggplant, because I don't peel it in some other recipes and it's fine. Not for this one- I would recommend following the recipe and peeling it! It just doesn't turn out the same.

Butternut Squash with Onions and Pecans
I rate this 3 stars because it was okay. The onions and pecans in it were great. I added cranberry's, cayenne pepper, and used fresh parsley. Also I microwaved the squash before cooking it. It was good and I went back for seconds. Just for the amount of work and time it took to prepare this meal, I will not be making it again.

Pasta With Tuna Sauce
Very tasty.. better than what I expected. Quick and easy to make. I used fresh red pepper, added that into the onions and it turned out fine. Also used tuna in olive oil.
